Dooku's history is the story of a good man sliding deeper into evil, ultimately becoming a cartoon supervillain who's either decided all he cares about is power now, or who is deluding himself into believing his own increasingly evil and over-the-top methods can still enact real good. It's a perfectly fine story to explore, but the star wars franchise is currently in the hands of women and sois who believe that any sort of examination of evil beyond condemning your enemies as nazis is to side with them.

they did, its called Dooku: Jedi Lost
its an audiodrama (although a book version exists) that goes over Dooku's time in the jedi, his relationship with his family, his time having qui-gon as his padawan and the events that made him eventually leave the jedi
its a dual perspective book, with the 2nd perspective being ventress and some of her time as dooku's apprentice prior to AoTC on a mission to find and kill Dooku's sister

Sidious wanted a lawful orderly galaxy so he could sit in a big chair and be evil, Dolly wanted order in the universe because he genuinely wanted order and hated how the Jedi Order didn’t really stop the injustice in the Galaxy. Palpatine simply betrayed him before he had the chance to betray Palp. His conversation to Obi Wan was from the heart, and he really did want him to join his side to help him betray Sidious

Anakin being THE CHOSEN ONE was the first to break that cycle and team up with Luke to actually end the sith line so all their accumulation of powers and shit over a gorillion years would be lost forever...until disney happened
