The unattainable is actually a really big part of what constitutes the beauty standards of a culture. Back in the day it was fat women since food was scarce, then it reversed back to fitness when it became harder to stay thin than being fat.
My theory on why thicker women regained popularity is because people realized its actually harder to stay in the sweet spot rather than being fat or thin. Musclegirls have also become more popular as people have become ware of how difficult it is for women to gain and maintain musculature.

Anon... a big part of the movie is Elastigirl's insecurities with her husband. She feels like a failure as a mom, wife, and ultimately as a person (because she defines herself by these things). Hence why she goes on a mid-life crisis Superhero adventure.

I'd imagine physics would still apply here. You can neither destroy or create matter, you can simply convert it to one thing or another (Law of Mass Conservation). If she were to change he size up or down it would actually change her weight, just the appearance of it. Think like a ton of feathers vs a ton of rocks, both are the same size but drastic differences in appearance and how heavy we perceive them to be

The in-universe explanation for this is probably that none of the new ones were designed by Edna. The same could be said for Helen's silver costume but it's clearly worse than her other two, and it's probably the absolute best they could come up with since she was supposed to be the lynchpin of the whole superhero relaunch.

they were the bottom-of-the-barrel supers that no one gave enough of a frick about to get on Syndrome's radar. In the golden age of supers maybe some people who knew PR well, like Edna, would have gotten to them and dressed them up well enough to market, but even then they'd be pretty hopeless cases, by and large.
Screech is a super whose power is itself mostly "being an offputting freakish monster out of someone's nightmares". He-lectrix is one of the most marketable ones, and he's a limp-wristed homosexual that Evelyn has to pass off as merely foreign. Reflux is apparently one of the oldest supers out there, to the point that it seriously impedes him, and has an illness-themed power; he presumably either got his powers late in life or has been prematurely aged by his powers; either way he certainly doesn't have the reputation that would come with having been one of the first supers out there, so he's presumably kept his powers hidden. Brick is a dyke of the "so masculine she'd be hideous regardless of her sexuality" variety. Krushauer is one of the most marketable ones, again, but seems to be moronic, or at least very autistic, or something like that (hugbox-themed power? humorously conceptually simple power?), and so needs to be closely watched and managed.
Voyd of all people is the cream of the crop here, and I'm pretty sure she's a troony. Maybe she was a troony before Evelyn found her, maybe she was a homosexual who was far gone enough that Evelyn decided she'd be more marketable as a woman than as a man, or maybe Evelyn finding her was just a lucky break and she hated supers in a sexually charged enough way that she decided to test her hypno tech forcefemming her for shits and giggles. In any case, these are the kinds of people who form a primitive '60s hippie commune of little note, not the kinds of people who become respected public men and women of renown.
