1's remake was unnecessary because the DS remake was already the superior version of the game over the SF ver and was released in the west. 2 however, never got a western release so it's nice to have all of them but 5 in english now. Except for 3 they're mostly english-speaking characters to begin with so having the text in Japanese is just plain inaccurate.
