The paralele universe thing was already set up in AT for a while now.
How? The Prismo thing never implied that all the different versions existed concurrently; rather it seemed like a single universe that was being changed by the implications of the wishes
Prismo was using the term "wish alternate reality" since the first episode he was in.
Hell the multiverse was confirmed even before that.

110%, it's reduced all plots to meaningless mush by over indulging Prismo as a plot device. Entire worlds are doomed casually in the show and yet we are expected to care about mainline Ooo for some reason because Simon chooses to live there. He doesn't even really have a reason to live there. I was a little surprised by how passionate he was about finding 'his' Ooo amongst the Kakera at the end.

Honestly, going to Fionna-World would've been a nice touch, especially given his despondence at the strange future world he showed in Dirt-Beer-Guy's bar.
But then he would've just vanished, with no explanation to Finn or Marceline about where he went.
Besides, the story had a moral, too: accepting where you are, and being happy with the life you have. Fionna did it, and so did Simon.
Plus, if he'd ended up in Fionna-World, then that world would've had no connection to Ooo whatsoever, forestalling the potential of season 2.
