It's not directly stated but I think it can be inferred that all Wish Magic in AT has a monkey's paw element to it. The other elementals warn Evergreen about the dangers of wish magic and even Prismo, who is a nice guy and legitimately wants to help Finn and Jake, warns Jake that his wish must be very specifically crafted to avoid unforeseen consequences.
So if the crown is a monkey's paw wish where you can't ask for specifics due to it acting off your subconscious, that's extremely dangerous.
The other elementals only said that Evergreen might not know what his true deepest desire is. There is no reason to think that if Evergreen was right about his wish and he wore the crown that anything would have gone wrong. How do you "infer" such a thing with no evidence?
If it's resetted. It can only grant one wish and a dinosaur already used it. And if you just wish for it not to corrupt you it will literally have no effect except for using up the wish.
I want to say I wouldn't...but even knowing what would happen it's still tempting. It's a chance at some big power and you'll be able to enjoy it sane for a while if you're smart

Jake's a badass chad, Gunter is a monster from before time even existed, and abracadaniel is already a wizard to begin with. It just makes sense to me that these guys can handle it. It's a retcon, but you can claim that it's still bonded with Ice King and so he's the only one who is most affected by it. In the first Fionna and Cake episode Cake put on Ice Queen's tiara and Fionna took it off saying that if she used it she'd go crazy like her eventually, and since that's a fanfic of Simon's creation then it stands to reason that the IK is somewhat aware of the danger the crown poses.
my headcanon is the original Owner should either die or undo the curse > Gunther was able to wear the crown and be Ice King after Simon became a human again > Alternate timeline Finn was able to become Ice King after Simon stopped the bomb and died under it

The reset crown is basically the Room from Stalker. You can wish whatever you want, but it will grant you what you actually want, even if you don't know it.

Winter King Simon was still Simon and was still somewhat crazy (Ice Marcy dicky ToT). He just pushed most of the crazy onto PB. He couldn't imprison PB due to her smarts and boosted magic from the madness, she'd escape and be very, very angry.
