Han thought what Jedi did was just a bunch of silly tricks -- there are a lot of those in the SW universe that can't be readily explained by an outsider. He didn't know the mechanism behind the Jedi's abilities, and he never questioned whether they actually happened.
Han simply doubted the existence of an all-powerful "force" as defined by the Jedi, and scoffed at the idea that some fricking palm-reader's mysticism could control his destiny.
Protip: Episodes 3, 6, and 9 prove that Han was right. Personal choice controls the galaxy -- not the "fate" foretold by the force.
The issue with Anakin is that people wanted a charismatic action hero, while Lucas was more interested in showing a troubled young man. I like how whiney Anakin is.

Natalie had a few good moments but overall she was quite static.
It was either due to her lines being weak, or just not bothering to put in effort.
She was still pretty cute dough.
She was T&A and she knew it. Her scenes were 100% low-effort shit 100% of the time, and her character is basically just a 1-dimensional plot device. I doubt it was professionally rewarding, likely a little demeaning, but ultimately worth it for the exposure and paycheck.
All of that results in a solid professional effort, but ultimately low-energy performance, Go watch all the Padme scenes and think if anyone else could have done better under those conditions - I doubt it.

Anakin is absolutely fine in the prequels, most complaints are unironically that he wasn't a Mary Sue.

Hayden's acting is pretty good, the wooden dialogue Lucas wrote is the problem.

Because ANH was written before Lucas had any idea what this was supposed to be, but he knew the force had to be a plot device and that was enough.
