It's way easier to schedule people if they don't have to be physically present at the same time - more importantly, easier scheduling cuts down on production time. Despite popular belief, it's not just about saving budget, it's about cutting down on time so you can pump garbage out quickly AND siphon off the money into whatever laundry scheme is being utilised.
Each release shows the audience doesn't care about practical effects or good acting, you can overwhelm your dumbshit audience with marketing. Marvel movies have been tailored around the lowest effort possible. They're pop music.

The VFX breakdown of Shang Chi is really illuminating.
Basically the studio will end up changing its mind a dozen times during shooting, so they film everything so that as much of it can be changed in post production as possible. The VFX artists are constantly time crunched. For Shang Chi they shot on location and built sets but it was so poorly thought out that they would then have to rotoscope everyone and put it all in a CGI space. So everything ends up looking flat and bland.

I saw a post by some MCU fanboy saying they hated the tea scene where Mordo describes dreamwalking to Strange while Wanda's face and the ritual she performs are softly overlayed throughout the scene, blending together to give the impression she is close and will do anything to find them as her red eyes haunt the background on the screen blending in and out. I really loved that scene and thought it was my favourite part in the movie, with Raimi's style clearly showing and making something unique, but the MCU fan found it ridiculous because it looked like it belonged in a 90's horror movie.
I liked that scene too. Frankly I thought DS: ITMOM had some of the most well shot scenes in the MCU. Many shots had more depth and were better lit than most of the MCU thus far. They also seemed to pause on things more, which allowed for more “breathing room” (the opening wedding scenes are a good example, especially when Stephen first sits down and talks with the person that lost their cat.)

If you want some genuinely very good ones, I’d recommend “X-Men: Days Of Future Past” and “Logan”. “X2: X-Men United” isn’t bad either. Also the Sam Raimi Spider-Man movies but you already quasi-mentioned them.
When it comes to the MCU though, I’d recommend “Iron Man”, “Captain America: The First Avenger”, and “Doctor Strange” (the first one.)
