I think that up until to the prequel trilogy the star wars universe was very weird and pulpy but it became more suited to that sort of thing when the prequels gave the senate something more than a background role.
Even the EU books had been giving Star Wars worldbuilding. So I don't understand why everyone thinks that because Star Wars is based off of sci fi serials, that means it can't have any depth or worldbuilding.

The universe established in the OT is simple, black-and-white, and cartoonish. Trying to add drama, complexity, or political intrigue to that type of environment is a losing battle.
The entire concept was to recreate pulp fiction action-adventure serials. It's not the fans' fault that the whole idea behind the franchise is self-limiting.
It's a story about a guy who looks like an evil wizard as the main villain. Not really something you could add complex politics to.

The politics in the prequel trilogy are not complex. They are simple as shit. The problem is all the characters not named Palpatine suck dick.
And that's the main reason it's bad. Kids don't care and it's far too simplistic for adults.

The politics of the prequel era are pretty dead simple ideas like "Politicians and corporations are corrupt and easy to manipulate" with characters having satire names like Nute Gunray or Halle Burtoni

It's more that I think the prequels are boring with worldbuilding that's often outright shit. Good worldbuilding is possible with Star Wars.
