Because by the time they're enlisted in the Society, they've already had their canon event, so there's no need no "convince" anyone that it has to happen in a certain way. Prav was the outlier because Miles (also another outlier) intervened and changed things.
The problem, which I'm sure they'll tackle in the sequel, is the CANON in itself, not them trying to prevent it from happening.
The subtlety of his character, rebellious nature, and he's genuinely probably the most important character in the entire film. Also anti-establishment, etc.

Gwen is 18 in the original Spider-Verse (15 months older than Miles), and Across takes place a year and a half later, so Gwen is 19/20 herself at this point.
