Gambit takes over the job of taking care of the wayward troubled mutant kids who don't have a home. So basically he'll be the teacher for a new young X-Men book.
Boring, he should go back to the thieves guild. There's too many X-men these days and he has nothing of value to add to a team, he's just there to fill the rooster, is better to have him as an occasional ally when they need to steal stuff or move trough the underworld.

His biggest problem is that he'd be really hard to cast in a movie. Any fictional character who's main trait is being *hot* and *charming* is almost always a disappointment when translated from page to screen.
Does he need fixing? He's honestly one of the few characters that didn't get fricked over by the Karoka era, had a solid mini in 2020, has gained a huge resurgence in popularity thanks to X-Men 97, and is going to be one of the big names in Uncanny X-Men. The cards are really in his favor right now, OP.
Nah he had a 5 issue release in either 2019 or 2020 that expanded on the adventures he had on the bayou when Storm was a kid. Was a fun romp with shit getting stolen, fights, usual Gambit fair. Was nice having a bit of a lower stakes X-Men book

Remove his powers, take away his love interest and introduce a black guy who has the same powerset only is more powerful and constantly saves Gambit from inept mistakes.
He and Rogue were some of the least involved major X-Men with the Krakoa homosexualry as well as being exceptionally normal looking and Rogue literally having Carol's powers.
Have them just decide they're done with all of this bullshit and tap out of it all. Then kill off Carol and make Rogue take her place and have them head an avenger's team because historically X-men do way better off the X-Men roster and on a different one than they do in an X-Book.
Or really just have them go fricking solo in New Orleans or some shit.
The first step to fixing 90% of X-characters is making them not X-Characters somehow, there's a reason becoming associated with the X-books is considered the worst fricking thing that can happen to a character in comics these days.
Honestly his solo books are the best because they just let him solve problems in more creative ways than you normally get in an ensemble style series. Shit like using chewing gun to make a charged bomb, using his charge to make boards of wood an impromptu surf board, being nearly immune to mind readers due to his kinetic energy more or less serving as a scrambler to his thoughts, he's got a nice skill set that feels more engaging when he's having to come up with plans on the run

At this point the only way they add drama to their dynamic is having a baby and becoming the one mutant happy family.

Considering he's showed up in a good amount of stuff the past 4 or 5 years, is getting merchandise still, and got to have a big hero moment in 97 alongside a lot of people emotionally invested in his death, I'd say he is, yeah. Just because his character's design is more mid 90s, and some more recent writers don't seem to like him, that doesn't mean he's not one of the best. I just hope he gets more solo things because that's where he really shines.

I think he would work better if he wasn't an X-men anymore. He's never the focus of any x-men storyline anyway so nothing would change that much.
