Because "Sith" in Disney Star Wars (TM) is just a shorthand for "evil", instead of an opposing philosophy to the Jedi. In and of itself, nothing within Sith teachings indicate you have to be a murderous butthole - it's the lack of control over one's emotion that cause that. Ironically, in the EU there were multiple examples of "normal" Sith.

pre-Disney EU, maybe. but back then there was a fairly large divide in the fandom between movie fans and movie + EU fans. games like dark forces, shadows of the empire, and KOTOR introduced video game lore fans into the equation. then Disney nullified all non-movie canon and started picking and choosing what they liked. it's a class A clusterfrick, just pick and choose what YOU like at this point.
