This is basically what happened in Korra. After the earth queen(who was a total parody of spoiled tyrant nobility) gets assassinated, the earth kingdom basically collapses into 1920s style Chinese warlordism only for Kuvira to reunite them under earth kingdom hyper nationalism and revanchism(one of her main goals is retaking the fire colonies and Republic city etc).

The former FN colonies would soon be pushing for independence or to become members of the FN due to the weak EK government and economy. EK would see this as a threat and claim the FN is rebuilding its colonial empire and must act to prevent another hundred years war. First attempting to bully the FN military out of the kyoshi island's vicinity by trying to bait the FN into attacking first, which wouldn't go well due to the economic and new cultural ties between the two parties, as well as kyoshi wanting to remain independent. Second, the EK would boost its presence in its former FN colonies, fueling resentment with the locals and beginning pro FN rebel movements.
The EK would do none of that because King Kuei is chill and that's suicide
You're right, I didn't even think about him being chill as hell and allowing all this to happen. I guess the way you'd get around him is several EK generals concluding that letting these former colonies break away could eventually lead to another invasion of the EK mainland, with the FN using said colonies as a spring board. Either another coup would take place (aang wouldn't stand by and let this happen due to his relationship with the king and could justify an invasion to remove a false government). Or they go behind his back and send agents to try and sway the various colonies into distrusting the FN with propaganda and coercion.
Them just going behind his back is the most logical solution.
That's what I figured, but I went ahead and threw the coup option out there incase someone suggested it. While the king might be much more aware of what's going on in the world, it wouldn't be the first time the military has gone behind his back to do what they want.

It's because, just like Zutara, it instantly provides romantic drama fodder. Divided by nation! Divided by class! War! Naturally differing life histories and philosophies! Fertile ground for story. The problem with Mai even in the show is, bless her heart, her relationship with Zuko is unfortunately quite boring. The reason they get together in the show is the same reason people don't like them: they get along too well and keep Zuko out of any real romantic drama. Zuko's drama is entirely his family baggage. His climax is accepting his own personhood and standing against his family to stop their crimes against the world. A complicated romance is fun to consider but dilutes what's supposed to be his fundamental deal. Having a girlfriend who he just sorta gets along with and gets his baseline personality is comfortable for a real person but kind of anathema to exciting stories.
Jin is also an incredibly blank slate and thus you can go almost anywhere with a story with her. This isn't necessarily about actual fan stories, but just the kind of impression of potential that sparks in any viewer's mind that helps create their emotional reaction to a character. Again, Mai loses out because her role is to be kind of laidback and undramatic. Which is why when she loses even that in the comics it's so much worse.

It's just really tiresome to see writers like that try. Aang was practically schizophrenic the way he'd bounce between being completely normal around Katara in one episode to just completely incapable of stringing sentences together in another when they decided it was time for "romance writing." The closest they ever got to a somewhat compelling Aang/Katara story was the Footloose episode, and that was in the third season. It's no wonder people latched on to Zuko/Katara, cause at least they got actually well written scenes.
Then they had the bright idea to make this kind of shit an important part of their sequel series.
