          Latinos have two "last" names, and the first one is always the paternal one (the one that the vast majority of people use as their last name as it's the one that gets passed down through generations).
          It's only Portuguese speakers that do it the other way around.

      That's how it work, family surnames always come after the many or little middle names you are given.

      It goes first name -> middle name (optional) -> mother's maiden suname -> father's surname.
      So judging by that, Manny's mum has Irish descent.

      There's a gag in The Grave Escape where it's established that Manny's names are the names of some assorted ancestors (except Pablo I guess? He doesn't start pointing until he gets to Gutiérrez)

      So an Irish guy must have married into the family at some point.
