It's sappy, it's the most Tumblr ending they could have gone with, and they did, and it entirely met expectations.
Star Vs ended with the titular character committing genocide and being rewarded for it, which not a soul on Earth wanted the show to end like that. It was grim for the sake of having a shocking unexpected ending and no one liked it.
Let's put it this way, there are two types of bad endings, a disappointing ending, and an ending so bad that it ruins the entire show. Steven Universe had one of the former, and Star Vs had one of the ladder.

People actively try to forget they were fans of the show and at best reminisce about the Red Wedding days.
If you're not a fan, then yeah, it's fun to watch a car crash into a mountain of explosive barrels, but if you are a fan, it's the worst feeling ever to watch your show nearly have it all and then get hakai'd out of existence over some bad missteps.
Differences though:
Simpsons have been going on for 35 years now, and it's a purely episodic show. New episodes don't retroactively affect whatever "lore" there is, and whenever something bad does happen to the show's universe, it's retconned by later writers anyway. Game of Thrones is an actual serialized narrative, not even some lore show but a full visual story. Plus for most normies, it only really started in 2012 because the novels never matter compared to the big screen, so the big rise and fall happened over the course of about 8 years, and the author keeps putting off the final book anyway. At any time, GRRM could finally release Winds of Winter and we could get a "real" season 8 that undoes the damage of the old one.
