The whole series has a weird premise in that she was barely legal by vampire years and married the first idiot she meets and starts having kids. This is made worse by Johnny being over the top stupid to make you sympathetic to dracula and his dislike for him.
Not really sure who the main plot point is for. Johnny is not attractive or interesting. He does not grow into either. Is it suppose to be for israeli dads who lose their daughters to non israelites? Are there a lot of cute goth israeli girls marrying non israeli dumbasses at 18 and pumping out little kids? This a current problem? And is the hotel a reference to the Catskill mountain resorts or something?

Well, yeah. Jon's not the one that needed to grow. He's a fully self-realized guy right from the start. The driving irony of the movie is that the immortal vampire is the one that needs to grow up. That comes through in the hotel activities, human/monster relations, and the fact that his daughter has become a woman. The movie is Drac's story and he's the one that needed to change.

I guess Mavis is suppose to be barely legal at the start of the movie. She falls in love with the first human she meets, gets married as soon as she is legal and has a kid. Both mavis and Johnny have to live with Drac and he pretty much gives them both jobs because of nepotism and Johnny not actually being good at anything.
Even if Drac wasn't over protective, Mavis's life trajectory is kind of horrible and not something you'd wish on your daughter. Nobody wants their daughter to marry and have kids with the first idiot they date at 18. No one wants to give their son in law a job because they have zero skills.
Drac being overprotective is exactly why Mavis failed to launch. If Johnny hadn't shown up, she'd still be gaslit into staying in the safety of the hotel forever, she'd still have to be given a job by her father because she has no skills, and she'd still have no dating prospects because the place was essentially a family resort.
All that aside, the Zing is an in-universe concept that every monster seems to know about and Drac has already personally experienced. There's no reason to think he'd have any objections to Mavis pairing off with a stranger within seconds of meeting him, considering their entire society considers that the purest form of love.

The Transylvania universe retcons it's importance by the third movie by having drac zing with van helsing's daughter, making a point that a person has many possible true loves if they let people in.

No. The first movie makes Johnny an off putting baffoon so you will sympathize with Dracula. Adam and the creative team want you to identify with all the main characters. They want you to sympathize with Dracula not wanting Johnny as a step son and Mavis for falling for someone well traveled.
However, they do too good of a job and even though Dracula learns to accept Johnny for the sake of his daughter and further getting over his wife's death, there is no actual change to Johnny, so there is no reason for the audience to change their opinion of him.
