The problem isn't with Joss Whedon, it's that he managed to do it well with Buffy becoming a hit and Firefly gaining cult status. This caused other writers to think they could do it too and they proceeded to write horrible cringe worthy dialogue and ruining the tone of every scene. Even Whedon himself couldn't write anything decent after his first couple of successes. But it does work if you're competent enough.
Nobody really cared about Whedon's style of writing until Avengers. The problem is that it mostly fit Avengers and was still novel back then, nowadays you can honestly never expect characters to ever be honest about their emotions anymore and the style of humor is so overdone it isnt even funny.
Gimli and Legolas had a friendly rivalry, Legolas is making fun of Gimli's height under the guise of trying to help him. This exchange works within the context of the film without devolving into a self-aware pedantic quipfest.
Except what he is saying is an action movie staple. Hero kills a guy in a gruesome way and then makes a quip. Bond did it. Arnold did it. Stallone did it. It’s fine to do this if that’s what you’re going for. If you want your movie to be lighthearted then it is a good idea to add jokes to deflate an otherwise dark scene before it spoils the movie’s overall tone.
That said Whedon isn’t the best writer.

Buffy, Angel and Firefly were pretty good and even Dollhouse was not bad at all. The guy knew how to balance some very real life shit with fantasy and action. Fans often say the first 3 seasons of Buffy are the best seasons, i myself used to think like this as well, but that´s not the case. The true strength of those shows was the character development (which is still one of the best on television).
The characters really grow and go through some real life shit. They lose their parents or are never enough to measure up to their expectations or constantly fail at everything while their friends move up in life. They fall into drugs and depression or have to take on responsibilities they are in no way equipped to handle, they lose their way and literally fall in hell while trying to escape their problems or ruin their own chances at happiness and destroy their relationships or have to see people they love die...
I really think it´s kind of unfair to only remember the worst parts of Joss. He was certainly flawed and admittedly his style doesn´t work for everything (specially once he himself lost balance) but i wouldn´t be so quick to disregard his contributions.
I don't rule out Whedon either but I don't agree with his writing style. Undermining a dramatic moment is tricky. You prefer a sense of humor because you can't create other sensations,This bothers me about Whedon and others like him.In the end he is a very poor film director but he is good at making television
