They fight directly with traditional swordplay. They show no particular acumen for stealth, underhanded combat, archery, thievery, acrobatics or speed.
Having said that I think 'fighter' would be a better characterisation than warrior.

Gandalf has tons of spells he just doesn't use them in a flashy manner.
Gandalf's class is always a contentious issue, but it is absolutely certain that he is not a wizard.
He's a wizard over 20,000 years old. He'd casually pick up enough martial combat to smoke any normal fighter, no matter how good.
Gandalf never casts anything above a third level spell thougheverbeit, so he's probably not a very high level character despite his age.

They were meant to be representatives of the major races in Middle Earth, united on a single mission. It was symbolic of Good vs Evil, not a min maxed party. The Fellowship broke up fairly early as well anyways with each of them (other than Frodo and Sam) playing more of a political/moral rousing/diplomatic role wherever they went.

I'd recommend trying the honor mode, it's still not exactly hard if you know what you're doing but they've made every combat substantially more risky, at least assuming you're going for a no-death run.

you can conjure a pet companion as sorcerer I think it was. either way the weasel one is able the pick pockets has its own inventory. so you remove all the items but the rift device and have the pet steal from the character or a clone rather (exact details are a little fuzzy right now) and hand over the copy of the rift device and keep the other one in pet inventory. take the pet through the sewer and take the rift device back. now you can put the rift device into your quick slot and when you're creating another clone your qick items get copied as well without exhausting the real ones. meaning, using the rift device you can reduce any characters HP to 1 in just one click. then you just create another clone and do it again.
probably was something about killing a party member and there being a chance of dropping a copy of the rift device on death. again don't remember exactly but it works and breaks the game. basically cheating but whatever. long story short game breaking in baldur's gate is like it's own meta game. just one way to do it.
another simple one is just using blindeness or feeblemind on stuff. if you know the mechanics of the game it's not difficult beating it, yes.

They do, but that stealth in particular was the enchantment on the cloaks every member of the party had. Aragorn, Gimli, and Legolas pull the same trick on accident when they're waiting for Eomer to approach.

These are so clear in the books that these characters are the very basis for the fantasy classes you know, homosexual.
Even the movies display these traits clearly:
Aragorn - Warrior who uses low lvl magic, melee & ranged, expert in tracking, hunting, stealth (I can go unseen if I wish)
Gandalf - A high level sorcerer (since it’s innate) who purposefully nerfs himself to let the other characters have fun
Legolas - Fighter with fast movement, rapid attacks and proficient in any weapon he gets his hand on
Boromir - Paladin with an oath to his nation, rallying troops, smites with superhuman strength and fights after taking mortal blows
Sam - Healer both physically & mentally
Frodo - Uses stealth, steals shit (moreso in the books)
Merry - lil warrior bro
Pippin - Obvious bard, comic relief, uses wits and charisma to persuade and decieve (convinced Elrond to let em join, lured Treebeard to Isengard, succeeded on a deception check against Sauron himself, got close to Denethor and literally sang for him)
If you knew anything about fantasy writing or class archetypes, you’d know the classes differ in personality & impact on the world, not just what weapon they kill with
