The Gundam gave Amuro the time to learn how to pilot, but by around the time he fought Ramba Ral he was already a good pilot and by the end of the series the Gundam was having issues keeping up with him and he was defeating suits equal to or better than the Gundam.
I don't think there were any suits better than the Gundam, except maybe the Zeong (that didn't have luna-titanium alloy) and a few mobile armors (that are inherently larger and more powerful than ma)
The Gelgoog was supposed to be superior in performance as well.
It has similar performance and beam weapons but no Luna titanium alloy armor which makes it frailer, and no magnet coating

Point remains, the Gundam still had advantages over the Gelgoog that would put it above it. The Gelgoog only has the advantage of being easier to mass produce, but by that point, there were GM variants that could match them, too.
I don't think anyone even used 90mm MGs anymore by the time Gelgoogs were rolling out. Certainly not the Federation.
About 80% of the GMs in MS Igloo, 0080, and 0083 are shown using 90mm machine guns. If not the 90mm gun then it's usually a bazooka.

I'd rate Judau higher out of the the UC cast, of the AU pilots who aren't Domon "I know magic kung fu" Kasshu and Kira "Three flavors of Jesus" Yamato, Garrod Ran BTFOs pretty much everyone, motherfricker was so fricking good as a vanilla ass pilot he broke predestination.
Garrod was carried by Tiffa and his OP Gundams, Xgay.
He fights peer opponents all the fricking time moron, and he straight up has to rescue Tiffa constantly and does plenty of shit without her.
There's no MS with a stronger weapon than the Satellite Cannon, other than the DX which is the most powerful MS in its setting but Garrod somehow still managed to get his shit kicked in while piloting it. And no Tiffa means Garrod would've died several times, especially because he wouldn't have been able to fire the "I win" cannon.
The Satellite cannon doesn't even factor in to a ton of his fights, particularly against the Frost Brothers in their own Gundams.
Why three flavors? I know the jesus part.

Garrod's adaptability is highlighted in-universe, but it's actually pretty low compared to other universes. Most of the time, he needs to get hit or outright beaten by something before coming back to counter it, while many protagonists in other AUs or even UC just learn how to handle Funnels and other tricky weapons in the middle of a battle.
People overhyped Garrod as being this huge anti newtype badass but that's not really the case. Not only did he have one of the most powerful suits of the setting but against Newtypes he was pretty much helpless until the actual newtypes told him what to do. He couldn't figure out the bits until Jamil showed him, and he couldn't deal with the one guy who used the actual flash system until Tifa showed him which one had the actual pilot in it. He's good, but hardly this super badass people hype him up to be.

Judau is a stronger newtype with his giant astral projection summoning, but Amuro is just generally more skilled

In CCA he was the apex. He ate Char, Gyunei and every other pilot for breakfast, he's also skilled in and outside his mobile suit.
He was hard carried by gundamium until he got enough experience to be competent and skilled.

I think Uso was probably the best pilot, he could beat zanscare pilots even when he was still learning to pilot, was outnumbered and just had a stolen enemy ms rather than a Gundam

No, he wasn't, he was crutching on the Gundam's near invulnerability to most of Zeon's MS weapnory and sheer performance gap, nearly every Zeon pilot on the roster was more skilled and experienced than him since they've been much more accustomed to their machines through training and experience and have been fighting for much longer.

He outfought skilled and experienced Zeon pilots even before he had a newtype awakening, Ramba Ral being the most notable. Amuro was good because he actually bothered to practice, study his machine, and analyze the enemy, being a newtype just enhanced what he gained through skill, but he was already a good pilot before then.
Uso had simulator training growing up, that matters a ton when becoming accustomed to piloting, Amuro had no experience, practical or simulated, before he jumped into the wienerpit and was thrown into the fire, nearly everything he gained was under do-or-die circumstances.
He beat Ramba in large part due to the Gundam's superiority, he didn't outskill him completely

By their last mobile suit encounter, they both had a better idea of how their opponent fought. Ramba was beaten because Amuro learned how to use feints and how to properly maneuver in close combat. That wasn't the Gundam's performance, that was skill, and Ramba was genuinely asshurt that he got outmaneuvered by a kid, which is why he tried to lay Amuro's victory solely on the Gundam rather than simply getting better.

He still had to learn how to fight properly to survive and defend the White Base, but encounters with aces like Char and Ramba Ral in increasingly better MS forced him to up his game considerably.

Different tech, different tactics, armor doesn't matter anywhere near as much by Victory, it stopped mattering much late in the OYW. Uso can't use his fancier tactics of throwing components at his enemies simply because no mobile suit at the time was anywhere near as modular and capable of independent control of their parts due to how comparatively primitive mobile suits were by the OYW. Amuro was chucking somewhat disposable things at his opponent as distractions before Uso became iconic for doing it.
Uso's prior simulator training while he's growing up still matters a ton more than Amuro's zero when he was first thrown into combat all while trying to RTFM in the middle of a fight. It's the difference between someone learning how to swim being thrown into a pool filled with aquatic predators versus someone with swimming in a safe environment until getting good enough to swim in the ocean.
Amuro's superpower was that he was the only one in the whole show who read the user's manual

It does not matter what Amruo thinks of the Gundam. As well ask him what he thinks of Fraw Bow. Before Amruo was, Gundam waited for him. The ultimate machine, awaiting its ultimate pilot. This is the way it was and will be. This way, and not some other way.
The Gundam is hardly the 'ultimate machine'. By the end of 0079 it was holding Amuro back, even with the magnetic coating applied.
It's still pretty damn top-notch by the standards of the OYW. A Gelgoog could get shot to scrap by a Zaku's 120mm, while the Gundam, or any Gundam made during the OYW, could easily shrug it off, and the Gelgoog still lacked magnetic coating, and at least 90% of Zeon MS were still using slugthrowers by the end of the war.
