What if the Avatar world had been based on medieval Europe?
How about the Enlightenment era? Your antagonist could be a Napoleon type of guy who's a revolutionary but also wants to run everything. Aang's a gypsy.
How are you supposed to utilize bending which was heavily rooted in Asian martial arts and philosophy?
Tie it to religion/magic. Traditional Asian martial arts is all mysticism anyway. Benders would be something like paladins or druids depending on the type of bending.
Could actually make for an interesting story if the Fire benders are the notVatican and trying to suppress all other forms of bending.

I think associating bending with religion can work. The Avatar returning could be less of a reincarnation and more of a Second Coming. Maybe ordinary benders' abilities (like healing people, controlling certain aspects of nature, conjuring certain things, or even smiting people with lightning) are considered to be miracles. There's probably a way to do this without it being annoyingly Christian, right?

It wouldn't be Avatar, it'd just be a story about the next true King of Britain traveling the lands under Mordred's control in an effort to find Excalibur and the Wizard Merlin, while at the same time rebuilding the Knights of the Round Table.
